In which frequency band 0805 surface mounted devices can be used? In which frequency band 0603 SMDs must be used?
In my opinion, It is not general. It also depend on the manufacturing. The components having 0603 or 0805 dimension may differ in frequency, and dependent on type like capacitor, inductor. Manufacturing data sheet for particular component be consulted.

Something that can guide you chousing the dimensions is the SRF (series resonant frequency) of the capacitor, especially for the DC blocking and decoupling capacitors.
Beyond the SRF a capacitor behaves like an inductor.
Smaller capacitor dimensions usually have higher SRF.
