why dont you try a pair to test one as trans anather as reciv.
Or a spectrum analyzer.
Spectrum Analyzer is a better choice i think since it can give you return loss as well as radiation pattern if used with proper equipment.

I think (if you dont have an SA or a scope of 500/1000MHz badwidth) you shold buld a small RF-rectifier and copple it through a small 1 windings coil to the TRX- antenna.
That thing has relative high output power...
Otherwise has i.e. ADI very good & really wideband + sensitive, but not very expensive RF detector ICs too(I think up to 2.5 GHz...)
They are in some home -browed SA/VNA & PowerMeter applications to find too...

In a hobbyist point of view i would suggest you to check each functional block step by step. as below
1. write a register inside cc1100 with a value
2. read the same register and if same then toggle a led..like that.
if sucessfull then you can load all registers as specified in the datasheet.
(try TIs RF Studio for optimum values)
Instead of going for infinite packet protocol...select any fixed packet method and also enable machester coding.
Every thing should turn out fine.
