Radiation conversion basics
I have measured radiation patterns of an antenna and got Az, EL and rEtotal magnitude and angle.
I want to now convert these into gain plots. What is the relation between the above and gain to be plotted in matlab?
is rEtheta = ReTotal cos angle? and rEphi = ReTotal sin angle? Where can I get the basics, could you please refer a book?

I think you want to look for what is called near-field-to-far-field transformation. If you search the Mathworks website, there is at least one code that I know if that will do all of this for you. You essentially calculate the electromagnetic fields VERY far from the antenna and use those to generate your gain plot.
I like your approach of asking about good references.
There are a number of good references on the subject. Kraus, Silver, Jasik (now Volakis) and the like. Many people like Balanis as a starting point. They all have discussions of the various antenna parameters. Surprisingly, Introduction to Airborne Radar, Stimson is another good reference. Radars really depend on antennas so any book that is trying to make sense of radars has to do a good job of describing antennas first. Introduction to Electromagnetic Compatibility, Paul might also be helpful.
